fresh pasta sauce with eggplant and mini meatballs

1 can chopped Italian tomatoes – 35 ounces

2 chopped fine large fresh tomatoes

1 6 ounce can of tomato paste

1 eggplant peeled and diced (if you use a traditional deep purple eggplant, choose a medium-size one)

1 large onion diced

1/2 head of garlic diced

fresh herbs to taste – basil and oregano and parsley

2 small hot peppers, diced. Mine are from the garden, and are cayenne peppers. This is not a recipe for jalapeno peppers. I would say little fresh cayenne, which are skinny red hot peppers. My hot peppers were maybe an inch and a half each, if that. So if you have one hot pepper and it is about 2 inches long, you’re good with that.

Salt-and-pepper to taste

1 bell pepper diced preferably any color but green

Toss into a crock pot on high for 3 hours and switch to low for 3 or 4 hours and stir once an hour and be gentle especially when you add the meatballs.

Put the lid slightly askew the last hour to hour and a half that you cook so the sauce cooks down properly. I put a splatter screen for a frying pan on top of the open cooking sauce and put the lid on top of that slightly askew.

Here is how you make the mini meatballs:

The mini meatballs consist of a pound and a half good ground beef , a half cup of breadcrumbs, a few dashes of milk, and one egg, four garlic cloves minced, two shallots minced, a third of an onion minced, tons of fresh herbs minced (parsley, oregano, basil).

Mix all the meat together and form into tiny meatballs a little over an inch in diameter.

Roast in a preheated 350° oven on a baking pan that has an edge (like an industrial baking or jellyroll pan) to catch any extra grease that might run off on parchment paper for about 35 minutes.

Allow meatballs to cool about 15 minutes on plates lined with paper towel to catch any extra grease, then toss into the crockpot and continue cooking.

You can serve the sauce over whole-wheat pasta, or mini ravioli. We used whole-wheat penne last evening. We dusted the top of each plate with shaved fresh Parmesan.

I don’t usually write about things like celebrities dying. But this evening I am. The news just broke today that actor Robin Williams is dead of an apparent suicide at age 63.

We were introduced to Robin Williams in 1978 when Mork and Mindy hit television. We giggled at his antics as an alien in a funky red outfit, and then we watched his transition to film. The World According to Garp (1982), Good Morning Vietnam (1987), the incredibly moving and fantastic Dead Poets Society (filmed at St. Andrews School in 1989), and howled at Mrs. Doubtfire (1993), loved Good Will Hunting (1997).

Basically every year since Mork and Mindy there was something or several somethings with Robin Williams in it.

But every time he was interviewed you saw other sides to him. Depression, manic behavior, substance abuse. Media referred to him as the “funniest man alive”, and like many other comedic geniuses there was this other side that was profoundly dark and sad.

Today, Robin Williams demons apparently got the best of him. According to the Los Angeles Times:

Robin Williams, a comic and sitcom star in the 1970s who became an Oscar-winning dramatic actor, died Monday at 63 in Marin County. The Marin County Sheriff’s Office said he appears to have committed suicide.

The news of the beloved actor’s death rocked the nation. Channels broke into their usual programming to make the announcement, and within minutes, Williams dominated online trending topics. Even President Obama noted his passing.

Williams, hailed as a comic genius, was a star of movies and television for more than three decades. He also suffered from substance abuse problems.

The actor “has been battling severe depression of late,” his publicist Mara Buxbaum said. “This is a tragic and sudden loss. The family respectfully asks for their privacy as they grieve during this very difficult time.”

So tragic. So sad.

Coroner investigators suspect “the death to be a suicide due to asphyxia,” according to a statement from the Marin County, California, Sheriff’s Office.
Williams married graphic designer Susan Schneider in Napa Valley, California, ceremony in October 2011. Schneider sent a written statement to CNN through the representative.

new in the garden

So I decided to try a couple of new plants. A echinacea (cone flower) I had never tried before and hummingbird mint (agastache).

The echinacea is called “Merlot” and the agastache is called “summer glow”.

Both are supposed to clump and be fast growers and attract hummingbirds and butterflies. The agastache is supposed to be a terrific companion plant to Nepeta (cat mint), but since it’s a little crowded already where I have clumps of Nepeta, I decided to try these two newbies together in their own spot. They like similar light and so on, and the colors are complimentary.

Overall my garden is doing quite well this summer,with a few hiccups here and there. Right now my Black-eyed Susans and phlox are going aging busters and it has been an awesome year for zinnias!

My hydrangeas are kind of messed up after the brutal winter we had. Some are blooming, but some will not this year I think due to the beating some took with snow and ice.

It has been a great season for roses, but one rose bush got a wicked case of black spot and some kind of mite and dropped leaves like crazy. I cleaned up around the bush, gave it a bit of a prune and new leaves are sprouting.

One plant giving me worry is a new Japanese Maple. I think it is called “fire glow” but I can’t remember. It was going like gang busters and all of a sudden almost overnight it’s leaves all dried up. Not wilted, dried up. I am afraid I didn’t water it right because I do not believe I planted it too deep. I hope it makes it.

This summer I have written a couple of posts about a farm being turned into a development. My first post lamenting the loss of another beautiful Chester County Farm has resulted in some of the family who grew up there sharing memories about the farm.

This morning I learned the name of the farm on White Horse Road. It was Spring Oak Farm.

Here is a snippet more of what was shared to me about the farm today in addition to learning the farm’s name:

I was 8 when we moved to the farm and I always felt grateful to be on the farm and to be in nature as I grew up…..The fences were painted bright white every year….The quarry dust made breathing difficult at times when we lived there…and there was the background noise of the turnpike like a din in waves depending on which way the wind was blowing. As my daughter wrote to you earlier – it was a magical place…..It was also a place of love and hard times and challenges ….How I found you last Sunday – well I was feeling homesick last Sunday and went up to the attic and was rummaging through some things from the farm and came upon a sterling silver box that had G.Q Radnor Hunt Races 1939 engraved on the top of it and on the bottom it had sterling silver marks and the imprint from England. So I began googling my uncle’s name and then my Dad’s name and it was with my Dad’s name that I found your blog…..The dog that the woman wrote about in your blog that used to ride around with my Dad all the time was named Rip. Rip was amazing after my father died in consoling the family…a very smart, happy and tuned in dog who carried a lot of love.

Having memories like this shared with me about something I have written about is simply amazing. And very moving.

I hope by writing these things that in a sense I am assisting in preserving bits and pieces of the very cool history of the county I now call home, Chester County.

My final note is this is one of the cool things about writing. For all the cranks who come your way who are miserable because they don’t like something you have written about, you also get these amazing people who are so kind and so gracious and who share additional things about what I have written about. People like the Quigleys make this so worth doing.

summer luncheon

Today I had a very dear friend over for lunch whom I hadn’t seen in forever. One of my favorite people, she is actually a mom of one of my friends. (And I love that my friend will share her on occasion!)

I wanted to do something special so I had a lot of fun playing with Depression Glass today for my table setting. I have collected this stuff over the years at church sales and flea markets and the Smithfield Barn. The cute napkin rings are a bit of vintage fun and came from Garage Sale Chic Chester County which is now part of Home Eclective in Downingtown.)

Anyway I wanted to make a ladies who luncheon kind of lunch, so I did. I started with Kendall’s Gazpacho, and also served my twist on chicken salad and a new potato salad in a mustardy dressing.

Chicken Salad with a Twist

Boil 3 bone in chicken breasts in water and sea salt. ( when cooled, I put the broth in small containers and freeze for later use).

When chicken is cooked, allow to cool. Remove skin and bones from breasts and discard. Next chop up the chicken into bite sized pieces.

Then, chop fine: 1 medium sized or small red onion, 3 stalks of celery hearts, fresh herbs (I used dill, tarragon, basil, Italian flat leaf parsley.)

In a bowl whisk together mayonnaise to taste, olive oil, red wine vinegar, a couple dashes of Garam Masala, salt and pepper. Also add a tablespoon of orange marmalade with any peel minced fine. (For me this was easy because my friend Sara had given me homemade orange marmalade that is not dense so I was able to spoon out a tablespoon of the jelly without the peel. The olive oil and wine vinegar is not so much, about 3 tablespoons each and maybe 1/2 cup of mayonnaise. Whisk together.

Combine all in a bowl and toss in a 1/2 cup of black or white seedless raisins. Mix and chill.

Roasted Potato Salad

Roast 1 1/3 pounds of small or new potatoes in a 400 degree oven with 1 head of garlic whole but topped (drizzled with olive oil, salt, and pepper to taste) for about 30 minutes give or take a few minutes.

You only want potatoes cooked and firm, not super crunchy and overly brown. I picked potatoes large enough to slice in half, did not peel them, and cooked them in a flat baking pan lined with parchment.

Meanwhile cook 4 oz of pepper coated bacon and crumble.(They have this amazing bacon at Pete’s Produce in Westtown that I used.)

Dice three stalks of celery heart stalks, 3 shallots, and one cucumber peeled and seeded. (Some people are cucumber sensitive so I have taken to scooping out the seeds as some have told me they like that better.)

Chop fine a bunch of fresh herbs- I used tarragon, chives, basil, dill, and Italian flat leaf parsley.

In a small bowl put half of the cloves on the head of roasted garlic minced, grainy mustard, balsamic vinegar, olive oil, and a little mayonnaise. Whisk it together and add a little salt and pepper to taste.

Combine everything, toss, and refrigerate.

I was out in the garden and I heard this sound that was a cross between a mew and a squeak. At first I didn’t see anything and then I saw impatiens and piece of lamb’s ear move. A little toad blinked at me.

I walked away thinking I had disturbed it. It then made more sounds so I went back. It now looked stuck to me so I moved the plants to peek. A snake had the toad’s rear leg in its mouth.

Yes, ewwwwwwww.

I used a little stick with leaves on it that had fallen out of a tree to move the snake off the toad. The snake slithered back into the plants and the toad hopped to the walk and blinked at me. I don’t know if toad will make it because it’s leg was bleeding a little.

Totally weird thing to see. And I never knew toads could make those noises.

what do you think of adults who approve of cyber-bullying?

cyber-bullying-posterAs many know, I have been the victim of cyber bullies for a couple of months now.  Cyber bullying happens to adults as well as kids.  People have liked and commented on the cyber bullying, which is tantamount to approval, is it not?

People who are actual cyber bullies (as in doing it) are  individuals with serious issues who hide behind a keyboard.  They go well beyond First Amendment rights. People who like cyber bullying are sad people as well.

The objective of cyber bullying is to hurt.

I am a blogger.  I am also a writer.  My opinions vary from the opinions of many on occasion. It’s life.  I am being bullied not because of that but for a much more personal reasons.   In a nut shell, I am being bullied because I am happy and love my life and crazy as it sounds, I am being bullied by people who chose to leave my life . These people  don’t even live in Chester County and they don’t know and have never met the majority of the few who like their efforts.

imageSome of the few people who approve of what is being done to me live in Chester County, but have never met me.  A volunteer at the Chester County SPCA is one who has liked things (out of deference to my friend Pat who is President of the board at the CCSPCA I haven’t mentioned this person.)  A couple of folks who may or may not be involved with other animal rescues but did not like things I wrote are others. Some people who have liked things on this page are what can be described as innocently naive to a lot of what is social media and who had absolutely NO idea what they were “liking” at first and then were mortified when they figured it out.

A few of these people who support this page (and there aren’t many who actually do support the cyber bullying efforts) live in or around West Vincent. They think they are above the law and like to tell people they are “connected” and what does that mean other than they know a couple of local and limited politicians who will eventually be out of office in a small, rural, and dysfunctional municipality?  The reason these West Vincent related people dislike me is  because quite simply I stuck up with my friends who have been quite literally victimized by the politics and pious hypocrisy of a small cabal in that township.  That and I objected to things like eminent domain for private gain when it was discussed a few Christmases ago with regard to the Ludwig’s Corner Horse Show. It makes me chuckle that these strangers consider themselves relevant to my life, because they simply aren’t.

These people have never met me. They have never had a conversation with me. Yet they “hate” me. Does it sound like middle school lunchroom bullying to you or is that just me? And the irony is participating on a cyber bullying site only hurts them, not me.

Cyber bullying however, is no joke. The difference between adults being cyber bullied and kids is that as an adult you have the ability to tune the noise out and to consider the source. As an adult you have the ability to discern that someone is mentally messed up, kids can’t necessarily do that as they don’t yet have the emotional maturity.

Cyber bullying is wrong. And there is a big difference between blogging and writing and cyber bullying someone.  As a breast cancer survivor I am made of tougher emotional stuff than others. So can I handle this ultimately? Yes, because these are mean people who don’t matter.  But the reality is that I am one of millions of children and adults being cyber bullied every day. So I decided to share this today. And the people who applaud this kind of harassment and egg it on are just as bad as those perpetrating the cyber bullying.

Cyber bullying is indeed against the law. I choose to ignore my bullies for the most part because they only want attention, and yes they exhibit stalker-like behavior (think Glenn Close in Fatal Attraction only far less polished).  They have this twisted obsession when it comes to me which shows their mental state, unfortunately.  And I have indeed had feedback from law enforcement about this as well as mental health professionals.  It’s sad, but their issues are their own, not mine.

Take a stand against cyber bullying and cyber harassment and cyber stalking. And if it could happen to me, it can happen to you. Or your kids.

Today my friend Teri came out for lunch. Her niece Sage was in town and she wanted to show her a little of Chester County.

We started off with lunch at Christopher’s in their new Malvern location! Lunch was excellent and so was the service.
